Curry Puff




Curry Puff Filling
300g diced chicken pieces
2 diced onions
300g diced potatoes (boiled)
100g diced carrots(boiled)
50g peas
6 tsp curry powder
1 1/4 tsp salt
water (to make filling moist)


Pastry
500g sifted plain flour
230g butter
1/2 tsp salt
125ml water


Methods
1. Rub butter in flour and salt until it resemble bread crumbs.
2. Add water and knead into a dough.(Add more water if necessary)
3. Place dough into refrigerator for 30 minutes.
4. While the dough is in the refrigerator, heat some oil in a pan.
5. Saute onions.Add in chicken pieces,salt and curry powder.
6. Then add potatoes,carrots and peas.
7. Add water if necessary.
8. Allow filling to cool.
9. Remove dough after 30 minutes, cut dough into 20 portions.
10. Roll each portion one by one, fill them with filling.
11. Deep fry.

Apple Custard Crumble


Apple crumble
6 apples
4 tbsp sugar
1cup flour
100g of butter
a pinch of salt

Methods:
1. Wash,peel and cut apples into cubes ( to prevent apple from oxidising, add sprinkle lemon juice on it)
2. Mix 2 tbsp of sugar and apple into a saucepan and cook it on low fire until soft and mushy
3. Add 1 tsp of water if bottom in burnt**
4. Set it aside to cool.
5. Mix salt, remaining sugar and flour.
6. Rub in the butter until it resembles bread crumbs.
7. Bake it at 180˚C for 20-25 minutes or until top turns golden brown.

Vanilla custard
1 egg yolk
1 cup of milk
1 tsp of cornflour
2 tbsp sugar
1/2 tsp vanilla essence

Method:
Add of the ingredients in a saucepan and cook it low fire by stirring it. Do not allow it to boil.

Butter cookies



Butter cookies
2 1/2 cups plain flour
1 tsp baking powder
1 cup butter softened
1 cup sugar
1 tbsp vanilla extract
1 large egg

Methods:
1. Whisk plain flour and baking powder.
2. Beat butter and sugar until fluffy
3. Add eggs. Beat
4. Add vanilla extract. Beat
5. Add flour mixture. Beat
6. Cling wrap mixture and place in fridge for at least 4 hours or until firm
7. Use a cookie cutter to cut dough.
8. Bake it 10-12 minutes at 190˚C.
